Mr. Singh enlightened the students about various processes employed in commercial baking at the ‘Jubilant Food Works Limited’. The company is suppliers to renowned International outlets like Dominos and Dunkin Donuts.
He shared the dough production technology for pizza and doughnuts manufactured by Jubilant Food Works, which is then dispatched from the company to 300+ outlets of Dominos. Starting from the ingredients used in bakery, he discussed about steps involved in baking with the latest technologies and the food safety management system that covers – CCPs, GHP, GMP, OPRP etc.
He explained the procedures applied to ensure safety and quality assurance techniques for at plant for checking incoming materials, online product checking, finished product analysis, batch monitoring, regular vendor and restaurant audits etc.
At last, a detailed Q&A session took place where the speaker Mr. Sameer Singh directly answered all the queries of the students.
