Diploma course in the field of Bakery and confectionery offered at Jaipur National University focuses on bakery and confectionery production. The course is bifurcated in two semesters. 1st semester comprises of approximately 6 months of theoretical and practical inputs, expert demonstrations and Guest lectures. It is an ideal choice for aspirants who want to make a career in the field of Bakery and Confectionery. Diploma in Bakery and confectionery inculcates hard core skills in candidates which help them to excel in the industry. During diploma course the students will have to undergo Hotel internship of 6 months. The subjects covered are Baking, cake and chocolate making in confectionery Hygiene, Equipment Maintenance as well as Costing. Students are accessed continuously for formative assessments. Students of Diploma in Bakery and Confectionery are trained in different types of bakery and confectionery preparation and also gain the entrepreneurship acumen. Students after completion of the course get placed in Bakery and Confectionery of the five star hotels, restaurants, cruise ships etc

Objectives:

The aim of this program is to develop skill and capacity to work in bakery and confectionery department single handedly as well as to develop entrepreneurship acumen in the students. This programme has been developed in response to the needs of those seeking self employment or jobs in the Industry. The course provides a concurrent relevant programme that is intellectually challenging yet interesting and effective in providing immediate employment. This programme provides 20 weeks “On the job training” which further skills the students and make them more employable in the industry.

Career Opportunities:

On completion of Diploma in Bakery and confectionery candidates may progress into employment as a Commi Chef to Demi Chef de Partie in bakery and confectionery of a Hotel / Restaurant or own-operated small business enterprise. Candidates can start applying for jobs after the completion of the training period or can enroll for the Bachelor programs in Hospitality course. Some of the major employment areas are Hotels, restaurants, canteens Hospitals and other food outlets related to Hospitality Industry. The students also look for entrepreneurship opportunity after the course.
